Judul : Pengaruh pendinginan air susu sapi terhadap angka reduktase, angka katalase dan jumlah bakteri
Deskripsi : Milk was the complete foodstruff and good media for microorganism, in such a way that it was very easy to experience change in composition. The aims of this research are to know the effect cooling of the milk to enzymatic test and total count of milk bacteria. The research used sum of milk were divided into three treatment groups as 250 cc milk in 27o C (1st group), 250 cc milk in 20oC (2nd group), 250 cc in 10oC (3rd group), and then examination by reductase test, catalase test and total count of bacteria. The result showed that, cooling of milk in 27oC insignificant difference with cooling of milk in 20oC (P>0,05), likewise cooling of milk in 20oC insignificant different with cooling of milk in 10oC (P>0,05), but cooling of milk in 27oC significant difference with cooling if milk in 10oC (P<0,05) to reductase test, catalase test and total count of bacteria.
